Italian Buttercream or Bust!

Are you one of those people preferring a less sweet frosting for your cake/cupcake? First, let me just say that I don’t get you (still love ❤️ you though). My favorite part of any cake/cupcake is the sweet frosting! The good news is that now I’ve got you covered. I have found the best frosting for you—Italian Meringue Buttercream!

For my cakes and cupcakes, I favor a cream cheese buttercream (CCBC). It’s delicious; thick, sweet, and creamy. It makes a great filling to keep the cake nice and moist too. It sends me on a trip to YUM-town every time!
It can be a bit tricky to pipe though and it has to be refrigerated if not being consumed within a few hours. Also, I prefer room temperature cupcakes. So, this means that I have to take CCBC frosted cakes/cupcakes out of the fridge 20-30 minutes before they are ready to serve. It’s worth it, but it is definitely extra work.

Italian Buttercream doesn’t have to be refrigerated (It can be left out for up to 2 days). That’s not all… It pipes well, holds its shape nicely, and stands up to humidity. Did I mention that it tastes AMAZING?! All of this without being overly sweet. What’s the catch, you ask?
Well, there’s a whole process…

It is challenging to make. The first attempt at this resulted in a very soupy frosting that couldn’t be saved. Every hack on google I could find—Failed! The buttercream was terminal and I had to send it plummeting to its death down the drain. I was bummed. I spent the whole day working on it and it was just gone. With some encouragement from my tiny baker, I set out on a mission to get this right. Italian Buttercream or bust!

One candy thermometer and four ice packs later…SUCCESS! Thick and creamy Italian Meringue Buttercream! This may just be my new go-to frosting!

    I am taking away by this cake. I work with your Aunt Karen and she actually shared a photo of this cake with me yesterday.
