Make Coffee Cake with me!

Sundays are for baking around here. This past Sunday the clouds were thick with the threat thunderstorms and the mood was just right to bake, so I pulled out my favorite recipes and said, “Let’s make some Coffee Cake!

I love this recipe and my family did too; including my picky-eater. The cake is so moist and delicious. The cinnamon-sugar streusel showed up and showed out with every bite. I decided that this recipe is too good not to share so…

Coffee Cake Recipe

Ingredients:

1 Cup Vegetable Oil 

2 Large Eggs

1 Tsp Vanilla

1 Cup Milk

1 Cup Granulated Sugar

3 Cups Flour

3 Tsp Baking Powder

1/2 Tsp Salt

1-1/2 Cup Brown Sugar

2 Tsp Cinnamon 

1/2 Cup Melted Butter

Instructions:

Preheat the conventional oven to 350 degrees. Lightly grease a 9×13 pan. In a large bowl, combine oil, eggs, vanilla, and milk. In a separate bowl, mix granulated sugar, flour, baking powder and salt. Set aside. In a small bowl, prepare the streusel; mix brown sugar and cinnamon. 
Mix the dry ingredients with the wet ingredients. The batter should be thick and sticky. Pour half the batter in the pan. Sprinkle half the streusel mixture. Add the remaining batter on top and add the remaining streusel. Melt the butter and drizzle on the streusel. Bake for 25-30 minutes and then let cook for 10 minutes.
